    Proximate and mineral contents of selected fish species from lake Victoria and lake Tanganyika, Tanzania

    The low consumption of fish products and malnutrition case in Tanzania is due, among other reasons to inadequate promotion and lack of sufficient information regarding their nutritional qualities. Tis study examined the proximate, mineral, amino acid compositions and the effect of season and processing on the proximate and mineral compositions of Latesnilioticus, Oreochromisniloticus, Rastrineobolaargentea, limnothrissamiodon and stolothrissatanganicae from lake Victoria and lake Tanganyika. Tanzania using stansard methods and procedures with a view to provide nutritional data to the consumers for a diatary planning and other health related issues. Samleswere collected during the rainy season (December 2012 to March, 2013) and dry season (June to September, 2013). The average proximate contents of the fish species were protein 17.03 to 19.58g/100g, lipids 0.80 to 2.49g/100g, moisture 71.04 to 74.19g/100g and carbohydrate 1.62 to 3.13g/100g. Protein and lipid contents were significantly (p≤0.05) relationship between lipid and moisture at 95% confidence interval. Major minerals were significantly (p≤0.05) higher during the rainy season in all the species, while the minor minerals were unaffected (p≥0.05) by the seasons. The species have good qualities of essential and non essential amino acids above the FAO/ WHO (1991) values. Cooking and sun drying were found to have effects on the proximate and mineral contents of the fish species. The practical application of the results is discussed in each chapter. Summary and recommendations were presented at the end of the thesis.
